Matteuccia struthiopteris is a fern commonly known as ostrich fern or shuttlecock fern. The young shoots, called fiddleheads, are edible raw or cooked. There is some concern, however, as many ferns are believed to contain carcinogens and some contain thiaminase which can prevent vitamin B from being absorbed by the body[1].
