Cirsium horridulum, commonly known as bull thistle, horrid thistle, bristly thistle, or yellow thistle, is an edible, but difficult to prepare plant. This plant is a biennial, growing a basal rosette the first year and reproductive parts the second year. The leaves and roots of the first year are edible. The second year, the root is too tough to eat, but the leaves and stock are edible[1][2].
